Cependant, les syst\u00e8mes de suivi actuels font face \u00e0 des d\u00e9fis critiques li\u00e9s \u00e0 l\u2019int\u00e9grit\u00e9 des donn\u00e9es, \u00e0 la transparence et au partage en temps opportun, en particulier dans les conditions r\u00e9elles d\u2019exploitation agricole. Cette th\u00e8se explore comment la blockchain, les v\u00e9hicules a\u00e9riens sans pilote (UAV) et l\u2019apprentissage automatique peuvent \u00eatre int\u00e9gr\u00e9s dans un syst\u00e8me de surveillance de la sant\u00e9 du b\u00e9tail \u00e0 la fois s\u00e9curis\u00e9 et \u00e9volutif, tout en abordant les goulots d\u2019\u00e9tranglement li\u00e9s aux performances du consensus blockchain dans des environnements r\u00e9seau d\u00e9favorables. Nous proposons DroneVet, une application bas\u00e9e sur la blockchain qui combine la collecte de donn\u00e9es par UAV, l\u2019analyse pr\u00e9dictive via l\u2019apprentissage automatique et un march\u00e9 d\u00e9centralis\u00e9 pour la coordination des missions. Cette architecture garantit transparence, tra\u00e7abilit\u00e9 et prise de d\u00e9cision pr\u00e9dictive entre les diff\u00e9rents acteurs de la cha\u00eene de valeur. Afin d\u2019\u00e9valuer la fiabilit\u00e9 de tels syst\u00e8mes, la th\u00e8se se concentre sur l\u2019analyse des d\u00e9lais des protocoles de tol\u00e9rance aux fautes byzantines (BFT) bas\u00e9s sur les graphes acycliques dirig\u00e9s (DAG), avec un accent particulier sur Narwhal et Bullshark. Nous d\u00e9veloppons des mod\u00e8les math\u00e9matiques et probabilistes des d\u00e9lais de consensus et validons ces mod\u00e8les par simulation. En outre, nous \u00e9tudions l\u2019impact des contraintes agricoles r\u00e9alistes \u2014 telles que la variabilit\u00e9 de la latence r\u00e9seau, la perte de paquets et les limitations \u00e9nerg\u00e9tiques des UAV \u2014 sur les performances des protocoles au sein de DroneVet. Les r\u00e9sultats mettent en \u00e9vidence le r\u00f4le central de l\u2019analyse des d\u00e9lais de consensus pour garantir une surveillance de la sant\u00e9 du b\u00e9tail \u00e0 la fois rapide, s\u00e9curis\u00e9e et robuste. En reliant la conception syst\u00e8me, la mod\u00e9lisation th\u00e9orique et la simulation dans des conditions pratiques, cette th\u00e8se contribue \u00e0 la fois \u00e0 une nouvelle architecture applicative pour l\u2019Agriculture 5.0 et \u00e0 un cadre rigoureux d\u2019analyse des d\u00e9lais pour les syst\u00e8mes de surveillance de nouvelle g\u00e9n\u00e9ration bas\u00e9s sur la blockchain.<\/p>\n\n\n\n<p><strong>Abstract :<\/strong><\/p>\n\n\n\n<p>Ensuring livestock health is fundamental to food safety, public health, and agricultural sustainability. Yet, current surveillance systems face major challenges related to data integrity, transparency, and timely sharing, particularly in the demanding context of real-world agricultural environments. This thesis explores how blockchain, unmanned aerial vehicles (UAVs), and machine learning can be integrated into a secure and scalable livestock health monitoring system, while addressing bottlenecks related to blockchain consensus performance under challenging network conditions. We propose DroneVet, a blockchain-based application that combines dronre-based data collection with machine learning analysis and a decentralized marketplace for mission coordination. This architecture ensures transparency, traceability, and improved decision-making among multiple stakeholders. In order to assess the performance of these systems, the thesis focuses on analyzing the delays of Byzantine fault tolerance (BFT) protocols based on directed acyclic graphs (DAGs), with a particular emphasis on Narwhal and Bullshark. We develop mathematical and probabilistic models of their consensus delays and validate these models through simulation. In addition, we study the impact of realistic agricultural constraints, such as network latency variability, packet loss, and UAV energy limitations, on the performance of these protocols within DroneVet. The results highlight the important role of delay-aware consensus analysis in ensuring fast, secure, and robust livestock health monitoring. By linking system design, theoretical modeling, and simulation under realistic conditions, this thesis provides both an innovative application architecture for Agriculture 5.0 and a rigorous delay
